1 16 oz can salmon
½ c milk
3 c soft bread crumbs
¼ c butter
⅓ c salmon liquid
3 egg yolks beaten
2 tbsp finely chopped green pepper
2 tbsp finely chopped onion
1 tbsp lemon juice
⅛ tsp pepper
3 egg whites, beaten stiffly

Directions:
Directions:
Drain salmon, save liquid. Flake the salmon.
Heat milk. Add bread crumbs and butter and let stand 5 min.
Add salmon liquid and beat until smooth.
Add egg yolks, green pepper, onion, lemon juice, pepper and salmon and mix well.
Fold in egg whites.
Pour into a well-greased 1½ qt loaf pan.
Bake in 350º oven 40-50 min.
Remove from oven and let stand 5 min.
Loosen from edge of pan with a spatula and invert onto a serving plate. Serve plain or with onion sauce.
