1 Large or 2 Medium Potatoes
1 Medium Onion
2 Stalks Celery
2 Cans Whole Corn
2 Cans Creamed Corn
1 16 oz. or more Chicken Stock or Broth
Pkg. of Smoked Sausage (you won't use it all)
Butter
Salt/Pepper

Peel 7 cut potatoes into cubes. Also cube onions and celery. Put in large pot with all corn and stock or broth. Simmer until potatoes are tender. In a small skillet put butter. Cut sausage into slices (coins). Add sausage to butter and cook until brown around edges. Use about half the package or to taste. Empty skillet into pot with all other ingredients. Salt & pepper to taste.

This was a made a lot when we were growing up. A favorite story is when Jayne's brother (Uncle John) came to visit, and she made this for dinner. As Mom served the chowder, John looked down at his bowl puzzled, and asked, "why is it called corn chowder?" Mom had forgotten to add corn!
