"A man who was fond of wine was offered some grapes at dessert after dinner. "Much obliged," said he, pushing the plate aside; "I am not accustomed to take my wine in pills."--Jean Antheleme Brillat-Savarin, The Physiology of Taste

Ingredients:
Ingredients:
1lb Sausage
1 tsp crushed red pepper
2 oz. bacon, precooked
1/2 lb. chopped yellow onions
1 tbsp. minced garlic
4 tbsp. chicken base
2 ½ qts. hot water
2 ½ lbs. sliced potatoes
¼ lb. chopped kale
8 oz. heavy cream

Directions:
Directions:
Preheat large pot on medium-high. Add sausage and red pepper. Cook until for 10 minutes. Break up large pieces. Remove from pot. Drain sausage and discard fat. Cook bacon and onion until transparent. Add garlic and sauté for 1 minute. Combine Chicken base and hot water. Stir until dissolved and add to pot. Add potatoes and cook until tender approximately 15 minutes. Reduce heat. Break up potatoes with a potato masher. Add kale and cream. Return sausage to pot. Simmer for 5 minutes.

To make this is a "skinnier" soup, replace sausage with turkey sausage and replace the potatoes with a head of chopped cauliflower. Very good!
