3 TBSP Butter
12-15 Large White Mushrooms
3 oz. Goat Cheese
2 TBSP Italian Bread Crumbs
1/2 c Prosciutto, finely diced
3 Shallots, chopped
2 cloves of Garlic, chopped
1/2 tsp Cayenne Pepper
2 TBSP Italian Parsley, Chopped

Directions:
Directions:
Preheat oven to 375º. Remove stems from mushrooms. Cut the ends off and chop up remaining steps. In sauté pan, melt butter and cook the stems for 2 minutes. Add garlic, prosciutto and shallots and cook for 3 more minutes. Turn off heat and cool for 3 minutes.

In a mixing bowl, combine cooked mushroom mixture, bread crumbs, goat cheese, Italian parsley and cayenne pepper. Mix well. Arrange mushrooms in a shallow baking dish and fill with stuffing mix. Bake for 20-25 minutes.
