6 slices of Bacon
1.5 lb Venison Tenderloin Roast
2 tsp Olive Oil
1/2 tps Onion powder
Salt, to taste
Pepper, to taste
2 TBSP Butter
8 oz of Cremini or Baby Portabella Mushrooms, sliced
2 cloves Garlic, chopped
1 TBSP Green Onion, Chopped
1/2 c Heavy Whipping Cream

Directions:
Directions:
Preheat oven to 375º. Precook bacon partially cooked buy still flexible. Brush Venison with olive oil and season with Onion Powder, Salt, Pepper. Wrap tenderloins with bacon and place in a roasting pan. Roast until bacon is browned and Venison is 145º in the center (~1 hr).


Heat butter in a saucepan over medium heat. Add mushrooms and garlic and cook until soft. Stir in green onion and cream. Cook, stirring often until heated through. Serve sauce over tenderloins.
