1½ cup plain flour
1 cup caster sugar
½ tsp ground cinnamon
½ tsp bicarb soda
3 eggs, lightly beaten
¾ pecan or walnuts, chopped
¾ cup vegetable oil
2 cups over ripe bananas, mashed
½ cup undrained pineapple, crushed

Frosting
60g cream cheese, softened
30g butter
1 tsp vanilla
1½ cup icing sugar

Directions:

Grease 23cm square slab tin. Preheat oven to 180ºC.
Sift flour, sugar, cinnamon and soda into a large bowl.
Add in eggs, oil, nuts, banana and pineapple. Stir until just combined.
Pour into square tin and bake for about 1 hour.
Allow to cool in tin before turning out.
Mix together the frosting ingredients and spread onto cooked cake.
