1 Whole Chicken
4 Ribs of Celery - Diced
1 Medium Onion - Diced
1 Teas Salt

Dumplings:
1 Cup Water
Pinch of Salt
½ Cup Butter (1 Stick)
1 Cup Flour
4 Eggs

Directions:
Directions:
Place first four ingredients in a pressure cooker - add as much water as pressure cooker allows. Pressure for 35 Minutes. Let cool down. Place Chicken broth in large, deep fry pan with lid. Let the chicken cool and discard bones and skin. Cut chicken in bite size pieces and place chicken in broth - place pan on stove until it begins to boil.

While waiting for the chicken to cool down, in a saucepan place water, salt and butter. Heat until the butter is melted then add the flour all at once. Stir well. Let cool. Add eggs, 1 at a time, stirring well after each addition. Drop batter by small spoonfuls into hot broth and chicken. Cook covered for 12 minutes or longer - keeping the broth just barely boiling.
