4 tbsp. butter
½ medium onion, chopped
2-3 cloves garlic, minced
4 tbsp. flour
2 c. chicken broth
1 tsp. salt
½ tsp. black pepper
¼ tsp. paprika
3 c. broccoli florets, chopped
1 large carrot, chopped
2 c. heavy cream
2 c. cheddar cheese, shredded

Directions:
Directions:
Melt butter in a large pot over med/high heat. Add onion and cook until softened. Add garlic and sauté for 1 minute. Add flour and whisk for 1-2 minutes until flour turns golden. Pour in chicken broth, broccoli, carrots, and seasonings. Bring to a boil, then reduce to med/low, and simmer 15 minutes until veggies are cooked through. Stir in heavy cream and cheese, simmer another minute. Adjust seasonings if needed.
