1 leg of lamb, boned and butterflied

Marinade:
¾ c. dry red wine
½ c. olive oil
1 or 2 cloves of garlic, minced
1 onion, finely chopped
1T. Dijon mustard
1T. brown sugar
1 t. Rosemary
½ t. oregano
½ t. thyme
½ t. ground cumin
¼ t. cinnamon
salt & freshly ground pepper

Directions:

Pour marinade over lab. Cover and refrigerate overnight. Next day, turn meat and baste. Keep refrigerated until 1 hour before cooking time.
Drain and reserve marinade. Place on lightly greased, preheated grill. Cook for about 40 minutes or until done, turning occasionally and bating with reserved marinade. The lamb should be well browned on the outside but pink in the centre.

I found this recipe many years ago in a Canadian Living magazine. It is always a hit. Don't forget to serve with Mint Sauce or Mint jelly.
