2 tbsp. butter
2 tbsp. flour
1 red bell pepper, diced
½ tsp. thyme
⅛ tsp. black pepper
8 oz. beef broth
Salt to taste

Directions:
Directions:
Melt butter in saucepan on medium/low heat. Add diced peppers and cook for 3 minutes, until peppers are tender. Add flour gradually and stir until flour is blended with melted butter. Add beef broth with a steady, slow pour while continuously mixing peppers. Stir until thick. Serve warm. Makes 1 cup.

This recipe is from Allie's paternal grandmother. It is great to drown roasted veggies and meatloaf in. It is best to make the beef broth from beef paste rather than use a can in order to make it as rich as desired.
