2 slices bacon
1 onion, chopped
1 green pepper, chopped
1 can black-eye peas, drained
1 cup rice, cooked
1 15-16 ounce can tomatoes, drained and chopped
¼ tsp salt
⅛ tsp pepper
2-3 Tbsp finely chopped green onions, for garnish

Directions:
Directions:
Fry bacon, reserve drippings and then crumble. Saute onion and pepper in bacon
drippings. Combine bacon, onion, pepper, peas, rice and tomatoes. Add salt and
pepper. Spoon into lightly greased 2 quart casserole and bake at 350º for 25-30 minutes or until heated through. Top each serving with green onions.

Tradition says: Black eye peas and greens must be eaten on New Year's Day for
good fortune. The black eye peas represent coins, and the greens represent paper
