2 cups sugar, 1 1/2 cups vegetable oil, 2 tsp vanilla, 3 cups flour, 3 eggs, 1 tsp baking soda, 1 tsp cinnamon, 1 tsp salt. 3 apples - peeled, cored and chopped into pieces.


Caramel glaze: 1/2 cup butter, 2 tsp heavy cream, 1/2 cup brown sugar, 1 tsp vanilla

º350 - preheat oven. Grease the bundt pan well. Beat sugar, oil, vanilla, and eggs until well mixed. combine the flour, baking soda, cinnamon, and salt. Stir into batter until blended. (Can use low setting on mixer) Fold in the apple pieces and pour into pan. Bake for 55-70 minutes. Cool for 20 minutes before inverting the pan.


Caramel glaze: Heat butter, cream, and brown sugar in a sauce pan. Bring to a boil. Add vanilla and stir. Let sit 10 minutes and then drizzle over cake.


Use a simple bundt pan....the fancy ones with all the ridges don't fare well with this recipe.
