Ingredients: 6 eggs
8 tbsp semolina flour
8 tbsp fresh Parmigiano Reggiano cheese
6 tbsp butter melted and cooled
1 tsp sea salt
1/2 tsp black pepper
1/2 tsp nutmeg
2 qts of broth

Directions: |
Directions:Preheat oven to 350ºF. Butter and line a 9X12 baking pan with parchment paper.
In a bowl, beat egg yolks, then slowly add the semolina flour and grated cheese. Add butter and continue beating while adding salt, pepper and nutmeg.
Beat the egg whites with a pinch of salt until stiff. Fold it into the egg-yolk mixture and pour batter into prepared pan.
Put pan in over and bake for 20-25 min until lightly browned. Cool.
Cut the bread into small cubes (about 1/2" each) . Divide the cubes amongst 8 soup bowls. Pour the hot broth over the cubes and serve.

Notes: Mommy did this soup on holidays or special occasions. The broth can be made from beef OR consomme'. Has to be a good broth! The dough can be made ahead of time, it will keep for a few days. If you want to add more flavor to the dough, sometimes Mommy added minced prosciutto or mortadella.
