6 eggs
8 tbsp semolina flour
8 tbsp fresh Parmigiano Reggiano cheese
6 tbsp butter melted and cooled
1 tsp sea salt
1/2 tsp black pepper
1/2 tsp nutmeg
2 qts of broth

Directions:
Directions:
Preheat oven to 350ºF. Butter and line a 9X12 baking pan with parchment paper.

In a bowl, beat egg yolks, then slowly add the semolina flour and grated cheese. Add butter and continue beating while adding salt, pepper and nutmeg.

Beat the egg whites with a pinch of salt until stiff. Fold it into the egg-yolk mixture and pour batter into prepared pan.

Put pan in over and bake for 20-25 min until lightly browned. Cool.

Cut the bread into small cubes (about 1/2" each) . Divide the cubes amongst 8 soup bowls. Pour the hot broth over the cubes and serve.

Mommy did this soup on holidays or special occasions. The broth can be made from beef OR consomme'. Has to be a good broth! The dough can be made ahead of time, it will keep for a few days. If you want to add more flavor to the dough, sometimes Mommy added minced prosciutto or mortadella.
