1 lb. ground beef
2 tbsp. taco seasoning
½ c. water
1 c. red enchilada sauce (mild or hot)
1 package white corn tortillas
1 package cheddar shredded cheese
1 can refried beans

Optional Toppings: Sour Cream, Salsa, Cilantro, Guacamole, etc.

Directions:
Directions:
1. Begin by browning your ground beef completely.
2. Drain excess oils or fats.
3. Add 1 can refried beans
4. Add taco seasoning and ½ c. water. If consistency is too thick, add more water.
5. Grab a 9x13 casserole dish and pour a little bit of red sauce into the bottom of the dish.
6. Grab your first tortilla and dip/coat the outside in red sauce and add a spoonful of meat mixture.
7. Roll up your tortilla, and set to the side of the dish. Continue this process until your entire dish is full of tortillas.
8. If you like a more saucy enchilada, pour any additional sauce over top of the enchiladas once you have completed your rolling.
9. Add shredded cheese on top of all the enchiladas.
10. Bake at 350º for 20 - 30 minutes, you can crisp them to your liking.

Serve with white rice or cilantro lime rice and any toppings you desire,
