LEMON BUTTER FROSTING
Ingredients:

4 cups coarsely chopped pared apples
2 cups sugar
3 eggs
1/2 cup oil
2 tsp vanilla
1 cup chopped walnuts
2 cups flour, sifted
2 tsp baking soda
2 tsp cinnamon
1 tsp salt
Directions:
Directions:
Combine apples and sugar. Let stand. Beat eggs slightly. Beat in oil & vanilla. Sift together flour, soda, cinnamon and salt. Stir in alternately with apple mixture. Stir in walnuts. Pour into greased & floured 13x9x2 pan. Bake 350º

Let stand in pan until cool, then turn out on rack to complete cooling. Frost with Lemon butter frosting (below) and cut into 12 to 15 squares
 

LEMON BUTTER FROSTING

4 tbsp butter
3 cups powdered sugar
2 tbsp lemon juice
1 or 2 tbsp cold water
Dash of salt

Directions:
Cream butter, add sugar gradually creaming thoroughly. Beat in lemon juice and enough water to make water to make frosting spreading consistently. Beat in salt.
