3 cups beef broth
½ cup chopped onion
6 Tbsp Margarine
½ cup all purpose flour
1 tsp salt
1 lb cubed beef stew meat
1 10 oz package frozen peas and carrots, cooked and drained
¼ cup snipped parsley
1 can Buttermilk Biscuits (2 cans if large casserole dish)

Directions:
In saucepan, cook onion in margarine till tender. Blend in flour and salt. Stir beef broth into flour mixture all at once; cook and stir until thickened. Add beef, peas and carrots, and parsley; cooked covered 45min. Pour meat mixture into 2-quart casserole. Place biscuits overlapping around edge of casserole. Bake in 450º oven for 20 to 25 minutes or till biscuits are browned.
