c. butter
c. celery, diced
1 c. onions, diced
1 c. vegetable broth or 2 chicken boullion cubes
3 c. potatoes, cubed (@ 4-5 potatoes)
1 pints of half and half
1 tsp. salt
2 tsp. ground black pepper

Directions:
Directions:
Melt butter in large saucepan. Add celery and onions and cook until onions are clear. Add the vegetable broth and potato cubes. Cook until the potato pieces are soft (or you can cut the potatoes and parboil which leaves a few small pieces of potato for texture.) Use a food processor or potato masher to mostly liquefy the potatoes. (A few small pieces of potatoes can remain.) Add the half and half, and salt and pepper. Simmer until well heated throughout and serve.
