1/2 lb fresh sliced mushrooms
1/2 c chopped onion
2 tbsp olive oil
1 10oz pkg fresh or frozen spinach
1 c heavy whipping cream
5 -6 large eggs
1-2 fresh garlic cloves, finely chopped
Salt and pepper for taste
Garlic and Onion powder (optional)
1 1/4 c shredded Mexican cheese blended, divided

Preheat the oven to 350º

Coat a 9-inch pie plate with nonstick cooking spray. Set plate aside.

In a nonstick skillet, saute mushrooms, onions and garlic in oil for about 5 minutes or until liquid has evaporated, then add spinach. Remove from heat when spinach is almost cooked. Set aside.

In a bowl, combine cream, eggs, salt and pepper and any other seasoning you like. Stir in the spinach mixture and 1 cup of the shredded cheese. Pour in prepared pie plate.

Bake for 35-40 minutes or until a knife inserted near the center comes out clean. Sprinkle remaining cheese around edge of tart. Let stand for 5 minutes before slicing.

This was a recipe that a co-worker of mine introduced me to when I was pregnant with Gage that I would crave all the time. I would make it on a Sunday evening and prep my meals for the week with this being my breakfast. It's so good and you can pretty much change it up however you like! It's a great way to get your protein and veggies in without all the carbs.
