1 unbaked perfect pie crust
7-8 cups peeled and sliced Granny Smith apples (8 apples)
½ cup sugar
¼ cup all purpose flour
¼ t salt
½ of a lemon, juiced

Topping:
¾ cup butter or 1 ½ sticks
½ cup flour
1 cup packed brown sugar
¼ t salt
½ cup quick oats
½ cup finely chopped pecans
½ cup jarred caramel topping

Directions:

Roll out the pie crust on a lightly floured surface, and fold it in half to transfer it into a deep dish pie plate. Arrange the crust. In a large bowl, whisk together the sugar, flour, and salt, then toss over the apples and add the lemon juice.
In the mixer bowl, combine the butter, flour, brown sugar, and salt with that damn pastry cutter until the mixture is crumbly and lumpy. Add the oats and pecans and stir to completely combine. Mound the apples into the pie crust, and then sprinkle all the topping over it. The topping barely fits but try to get it all on there!
Lightly cover the crust edges with foil and bake for 25" at 375º. Then remove the foil and bake for another 25-30", until the top is golden brown. Watch the top carefully to make sure it isn't getting too browned, and if it is, cover it with foil. Remove from oven and top individual pieces with warmed caramel sauce.

I make this pie every Thanksgiving bc I don't like Pumpkin Pie. I like my apples kind of firm, but one year they were too firm. It probably needs a full hour at least, and the directions only add up to 50-55".
