4 chicken breasts, pounded to about 1/2 inch thick
6-8 strips of bacon, almost fully cooked
Mushrooms, sliced and cooked for just a minute total(optional)
2 tbsp Honey Mustard salad dressing (full-fledge calories or low calorie will work)
Fiesta brand Chicken Fajita Seasoning dry mix (found in the Mexican food section where the spices are with a white cap)
Pepper for taste
2 tbsp butter
Extra Honey Mustard dressing for dipping

Directions:

Preheat oven to 400º

This is best cooked in a large cast-iron skillet. Add the butter to the skillet until fully melted. Season both sides of the chicken with the Fiesta brand Chicken Fajita seasoning and pepper. Place in the skillet and turn when almost caramelized on one side.

As the other side is cooking, using a brush, liberally apply honey mustard dressing on the top of each piece. Next, add the slightly cooked mushroom slices. Place the bacon on top of the mushrooms evenly. Lastly, sprinkle on the cheese on the tops of each chicken breast. Add more for an extra cheesy flavor.

Place skillet in oven. Let the cheese melt perfectly and then serve.

This is perfect with extra dressing on the side for dipping, along with mashed potatoes, homemade green beans, and rolls if you want to make a huge meal out of this.

**The Fiesta Brand Chicken Fajita seasoning has a lot of flavor in it that I love to use on all sorts of meats. It keeps you from having to have your entire spice rack out or spending a lot of money on all the ingredients that it has in it.
