2tbsp Olive Oil
2large minced Garlic cloves
1C chopped Onions
3/4C uncooked Barley
5C(total) any combination of cut up Leeks, Carrots, summer Squash, Zucchini, Celery, cabbage, mushrooms
9C Water
1/4C chopped Parsley
1 Bay Leaf
3C canned Tomatoes in puree
1tsp Sugar, Salt and Pepper to taste
1-2tsp Final Experiment Hot Sauce
1C+2tbsp grated Parmesan cheese

Directions:
Directions:
In a large deep kettle, heat olive oil and sauté garlic, onions and barley until the onion is translucent

Stir in vegetables (EXCEPT cabbage and mushrooms IF USED)

Sauté 2-3mins

Add water and bring to a boil

Add parsley and bay leaf

Cover and reduce heat

Simmer for 40mins OR until vegetables and barley are just tender

Stir in tomatoes

Add sugar, salt, pepper and hot sauce

Add cabbage and mushrooms- IF USING THEM

Simmer 15mins longer OR until vegetables and barley are completely tender

Adjust seasonings

Just before serving, sprinkle each portion with grated Parmesan

BARLEY TENDS TO THICKEN ON STANDING, SO IF SOUP SEEMS A LITTLE THICK, SIMPLY ADD A LITTLE WATER TILL YOU REACH DESIRED CONSISTENCY
