Ingredients: 2 boneless, skinless chicken breasts 3-4 c of chicken broth 1 can of black beans, rinsed and drained 1 can of corn, drained 1 can of Rotel, 1/2 red onion, diced 1 clove garlic, finely diced 1/2 lime, squeezed 1/4-1/2 bunch of cilantro, chopped Garlic powder Onion powder Louisiana Seasoning (or any form of cajun seasoning) Pepper Extra limes to squeeze in soup Fresh jalapenos sliced to add for garnish Shredded cheese to top with Tortilla chips

Directions:Boil the chicken until fully cooked, then shred using forks, or using a handheld mixer and a bowl. Using a large pot, boil the chicken in chicken broth. Once cooked, pull the chicken out to shred. Place back in the pot and add the vegetables and seasoning. Let simmer for about 15 minutes. Garnish with cheese, extra cilantro, lime, tortilla chips....pretty much anything that sounds good to you.
Hint: You can use half of the vegetables, leaving you with black bean salsa to go with it.(recipe has been added for this)
This is great with jalapeno cornbread as well. (recipe will be added) |
