Corned Beef

3-4 lb. corned beef brisket (Don't get the cheapest one because it will shrink too much.)
mustard
1/4 c or more of brown sugar

Directions:
Directions:
Don't wash meat.
Place corned beef in crockpot and cover with water.
Add seasoning packet.
Cook on high heat 6 hrs. or low heat 8 hrs.
Remove meat to baking pan.
Spread top with mustard.
Sprinkle with brown sugar to cover top of meat.
Bake 15-20 min. at 350º F.
To serve, slice across the grain, making thin slices.
 

Vegetables

3 medium size potatoes, pared and cut in half
3 carrots, pared and cut in 2" or 3" slices
Half head cabbage, cut in wedges or pull apart by leaves

In large pan, add potatoes and carrots and cover with water.
Cover pan and bring to boil.
Cook on medium heat for 10 min.
Add cabbage, cover, and cook another 10-20 min., depending on size of cabbage.
Drain, season with salt and pepper; add 1/2 stick margarine to melt.
Stir so vegetables are covered with butter.
Put in large bowl and sprinkle with parsley, if desired.
Some recipes say to cook vegetables with corned beef in crockpot, but this didn't work well for me when I tried it.
