Ingredients:  
Ingredients:  
2 tbsp olive oil or vegetable oil
4 cups butternut squash (clean and cut)
1 large yellow onion (chopped)
1 cup granny smith apples peeled and cut in small pieces (or other tart apple)
1 ½ tbsp. curry powder
¼ tsp. cumin powder
3 cups chicken stock/vegetable stock/ or water
Salt & pepper
Optional: plain yogurt or sour cream; slivered almonds

Directions:
Directions:
1. Sauté onions in large pot with olive oil
2. when onions are soft/translucent, add curry powder and cumin powder
3. put diced apple in pot and cook for about 2 minutes or until soft
4. put diced squash in pot and cook for about 2 minutes or until soft
5. put in 3 cups of stock or water (or at least enough to cover the apples and squash)
6. salt and pepper to taste
7. bring to a simmer for 10 minutes or so… or until soft and mixed together
8. blast with a hand mixer to blend
9. serve with a dollop of sour cream (or plain yogurt) and sprinkle on slivered almonds
