2 eggs or egg whites
¼ onion chopped
¼ green pepper chopped
¼ avocado mashed
¼ cup of chopped fresh spinach
¼ Tsp sea salt
¼ Tsp pepper
4 slices of bacon - (cook bacon in oven on draining pan -flip until crisp) optional
Sprinkle of cayenne pepper
Multigrain or Spinach wrap

Melt butter or ghee in a skillet over medium-low heat. Crack eggs beat until foamy. Pour eggs into the skillet and cook
Flip eggs, and cook until eggs are done, 2 to 5 minutes.
Remove and add green peppers and onions sauté until tender.
Meanwhile, prepare your wrap. Heat in a skillet for 3 minutes, flip halfway through.
Mash avocado in a bowl; stir in lemon juice, cayenne pepper, and sea salt.
Spread avocado mixture onto wrap.
Add scramble egg, sautéed green peppers, and onions.
Top with 2 slices of cooked bacon
Top off with fresh chopped spinach
Add sea salt and black pepper to taste
Take wrap and fold over on both sides
Enjoy!

My children were always on the run so I had to be creative in order to get them to eat breakfast first. I would chop the onions and green peppers the night before to save time in the morning. I would get up, put the bacon in the oven. Wake everyone up and continue to prepare breakfast. They enjoyed it and I was happy they had a full tummy!

My children are grown now, and I seem to be the one on the go...it still works for me! If I cannot eat right then, I wrap it up and take it with me. Easy, healthy and fast!
