1 pork tenderloin
1 jar of tomato sauce (or homemade sauce)
2-3 medium-sized zucchini, sliced
1 pkg.of sliced mushrooms (or 2 small cans)
12-16 ozs. of mozzarella cheese

Directions:
Directions:
Preheat oven to 350º. Slice zucchini. Slice pork tenderloin into medallions. Using a 9 x 12" pyrex dish (or any dish that allows layers), pour sauce until a very thin layer covers the bottom.

Layer pork on bottom and then add the zucchini in a layer. Add another thin layer of sauce and then layer the mozzarella. (I prefer a good layer of cheese but that is at the cook's discretion). Repeat until all ingredients have been used. There should be at least two layers and the top layer should have cheese completely covering it. Bake in preheated oven for 40 minutes or so until pork is cooked through.
