1 cup butter or margarine, softened
1 cup granulated (white) sugar
1 cup brown sugar
2 eggs
2 tsp vanilla

2 cups all-purpose flour
1 tsp baking soda
1/2 tsp baking powder
1½ tsp salt

2 cups Crisp rice cereal (Rice Krispies or No Name)
2 cups rolled oats
1 cup coconut
1 cup raisins

Directions:
Directions:
1. Cream butter and both sugars together. Beat in eggs 1 at a time. Add vanilla.

2. Stir flour, baking soda, baking powder and salt together and add. Mix.

3. Add cereal, oats, coconut and raisins. Mix well. Dough will be thick. Roll into 1 inch (2.5 cm) balls or push off pieces of dough from spoon. Arrange on greased baking sheet. Bake in 375˚F (190˚C) oven for 6 to 8 minutes until golden. Makes 8 dozen.

These don’t last long! They are my favourite cookie to give to new parents. A mini breakfast. You can also substitute chocolate chips, cranraisins or omit coconut and raisins. I will also do half and half whole wheat flour and a bit of ground flaxseed in the batter. I also use a small scoop to put cookies on cookie sheet.
