2 boneless skinless chicken breasts
¼ tsp. kosher salt
¼ tsp. black pepper
¼ tsp. garlic powder
4 thin slices prosciutto
½ cup chopped spinach
½ cup shredded mozzarella or provolone
¼ cup parmesan
2 tsp. EVOO
1 tsp. paprika
EVOO and melted butter
breadcrumbs

Directions:

Preheat oven to 375 degrees. Line baking sheet with parchment.
Butterfly each breast and lay open like a book. Sprinkle inside with salt & pepper and garlic powder. Lay a piece of ham on one side of each breast top with ½ the spinach and mozzarella. Fold breasts to close them up. Melt some butter and evoo . Roll breasts in mixture, then roll in Bread crumbs. Sprinkle parmesan on top, sprinkle top with paprika.. Place in oven 35-45 minutes to a temperature of 165 degrees.
