2 c flour
1 tsp cinnamon
½ tsp baking soda
¼ tsp baking powder
2 eggs
1 1/3 c sugar
2/3 c oil
2 tsp vanilla
1 c grated cucuzza (no large seeds)
1 tsp fresh orange zest
¼ c crushed pineapple (drained)
¾ c chopped pecans

***glaze-1 c powdered sugar,6 drops milk,⅛ t almond extract mix well

Directions:
Directions:
Preheat oven 350º.Shift flour and add cinnamon, baking soda, and baking powder together set aside. Beat eggs with sugar, oil, and vanilla. Add flour mixture to egg mixture and mix well. Add grated cucuzza, orange zest, pineapple, and pecans. Mix well.

Divide batter into 2 greased loaf pans (pans should be 1/2 full)
Bake 45 minutes or until cakes test done.

Let cool/remove cakes from pan and glaze.
