Ingredients: 16 oz cremini mushrooms, quartered (two boxes of 8oz I buy at the 99 cent store) 5 TBSP olive oil 1 tsp kosher salt 2 TBSP fresh time leaves, or 2 tsp dried 1 large shallot chopped fine (or 1/4 C onion) 4 garlic cloves, chopped fine (or 4 tsp of bottled chopped garlic) 2 TBSP flour 2.5 C of whole milk (we use Fairlife--we're lactose intolerant) ground pepper 1 lemon (zest skin, reserve juice) 1/3 cup sour cream, slightly thinned with a TBSP of water 8 oz lasagna noodles, broken in thirds 5 oz mozzarella cheese (preferably grated from a block) parmesan cheese, grated fine

Directions:In a cast iron dutch oven, heat 3 TBSP of olive oil over medium-high heat. Add mushrooms and don't move them around the pot. Let brown for 3-4 minutes until they start to get some color. Season with a pinch of salt. Toss lightly for about 6 minutes and transfer to a bowl. Add thyme.
Reduce heat to medium-low and heat the remaining 2 TBSP of olive oil. Add shallot or onion and garlic. Cook, stirring, about a minute. Sprinkle flour over shallots and cook a minute or so.
Stir in milk, pepper, 1tsp salt and 1-3/4 Cup water and lemon zest. Cook on medium until bubbling, stirring often. Reduce heat low.
Off heat, stir in sour cream mixture. Add 1/3 noodles, pushing down to cover with liquid Top with 1/3 C mushrooms, Top with 1/2 remaining noodles and mushrooms. Cover with a lid and cook 15 minutes.
Uncover. Move noodles around slowly to let the sauce get under the noodles. Cook until noodles are al dente (6 minutes or so).
Heat broiler. Top lasagna with mozzerella cheese and brown cheese to your liking--1.5 or 2 min. Let it rest for 5 minutes.
Can serve with lemon wedges if desired. |

Notes: Makes a lot but freezes nicely.
If you can't find cremini mushrooms, other varieties could could be used, mix and match. I've even used reconstituted mixed dried mushrooms. You can use the soaking liquid in leu of the water.
