1 Tbs red wine vinegar
4 Tbsp fresh lime juice
2 Tbsp olive oil
1-1/4 tsp salt
tsp black pepper
2 15 oz cans black beans, drained and rinsed
1 17 oz can whole kernel corn, drained and rinsed
3 large tomatoes chopped
cup red onion chopped
cup fresh cilantro chopped
2 large avocado diced


In a large bowl, whisk together red wine vinegar, lime juice, olive oil, salt and pepper

Add black beans, corn, tomato, red onion and cilantro and mix to evenly combine.

Gently fold in avocado

Chill in the fridge for 1 hour to allow flavors to combine.

Serve with a big bag of scoop tortilla chips

This could also be served as a salad but I love it with the crunch of the chips
