1 white onion chopped
1 green bell pepper chopped
1 1/2 cups mushrooms (from the jar drained)
1 1/2 cups carrots cubed
2 cups ham chopped
2 eggs whisked
4 cups cooked rice
2 tablespoons oil
1/3 cup soy sauce
2 green onions chopped for garnish optional
salt to taste

Make the rice according to the instructions.
In a large skillet heat the oil. Add the onions and cook for a few minutes then add the bell pepper and carrots and cook on medium. Then to the skillet add the ham and mushrooms. In a small skillet cook the eggs and then add the cooked eggs to the ham and veggie skillet. Then add the cooked rice to the ham and veggies. Put the soy sauce on the rice and stir. Cook on low for about 10 minutes. Add salt to taste. Garnish with the green onion.
