25 lbs real lean beef
8 lbs lean pork
2 1/2 lbs brown sugar
3/4 lb meat salt (canning salt)
1 1/2 oz black pepper
2/3 oz salt peter

Directions:
Directions:
Grind Pork fine and grind beef twice. Put in dish towel sacks and tie shut. Hang in a cool dry place four days. Paint with Hickory liquid salt and paint again in 5 days.

After 3 months you can cover with wax.

Put meat flat on table and put all ingredients on top. Mix with hands until sticky.

Sacks should be made so they are 2 1/2 to 3 inches across.
