4 Chicken breast
2 tsp. salt, for chicken
1 tsp. pepper, for chicken
1 tbsp. oil
3 Cloves of garlic, chopped
½ Diced onion
1 Tomato, diced
2 Cups of spinach
2 Cups of heavy cream
1 tsp. salt
1 tsp. pepper
½ Cup of grated Parmesan
2 tbsp. of chopped fresh parsley
½ Mushrooms (optional)
Directions:
Directions:
Season the chicken with salt and pepper.

Heat oil in skillet over medium-low heat.

Place chicken in skillet and cook about 13 minutes until fully cooked and slightly browned. Remove from pan.

Add garlic and onion to skillet until onions are translucent. Add mushrooms if desired. Stir in tomatoes and spinach until spinach is wilted.

Add heavy cream, salt, and pepper and bring to a boil.

Add the Parmesan cheese and parsley stirring until the sauce has thickens slightly.

Place the chicken back in the pan, spooning the sauce on top of the chicken.

Serve!
