Ingredients: 1 Pkg (12 oz) Vanilla Wafers, finely crushed (or 1 Box Oreo Cookie Crumbs) 1 C Finely Ground Pecans or Walnuts ¾ C Sifted Powdered Sugar 2-3 T Unsweetened Cocoa Powder (omit if using Oreo Cookie Crumbs) 2-4 T Light Corn Syrup ¼ C Kahlua Liqueur (or other flavored liquor - Bourbon, Rum, etc) Additional Powdered Sugar with 2T Cocoa added

Directions:Combine Cookie Crumbs, Powdered Sugar, Ground Nuts & Cocoa together in large mixing bowl. In a small mixing bowl, combine Corn Syrup and Liqueur and mix well. Pour the Corn Syrup mixture over the crumb mixture & mix well.
Notes - The mixture will be very stiff but the crumbs will absorb the liquid. You may need to hand-mix in an additional 1-2 T of Corn Syrup to form the right consistency to allow you to form balls that will hold together. If it's very humid, you won't need as much liquid.
Shape into small balls and roll in the Powdered Sugar/Cocoa mixture. Layer in an airtight container with wax paper between layers.
These just get better with aging and it really needs to be made at least 1 week in advance. Before filling holiday tins or placing on trays, re-roll in the Powdered Sugar/Cocoa mix and place in paper candy cups. |
