1 ½ C Sugar
6 T Flour
3 C Milk (½ Cream)
4-5 Eggs (Separated)
½ tsp Vanilla
¼ tsp Salt
4 T Butter

Chocolate Pie
4 T Cocoa

Coconut Pie
Shredded Coconut

Directions:
Directions:
Make a paste of the Sugar, Flour, Salt & a small amount of Milk. Slowly add beaten egg yolk, stirring after each yolk. Add the remainder of the Milk.

Over medium heat, cook until boiling. For a thicker pie filling, cook for a few minutes after boiling. Remove from heat and add Vanilla & Butter.

Cool & pour into a baked 9" pastry shell.

From Kim Herman - It seemed like Grandma always had a vanilla or chocolate or coconut cream pie when we would come for lunch on Sundays. I never cared for the giant meringue that she would put on top but have now grown to love it. They always looked beautiful!
