3 egg yolks
1 c. oil
1½ c. sugar
1 tsp vanilla
3 tbsp hot water

1 c. shredded carrots and 1 c. shredded beets
½ c. nuts
2 c. flour
2 tsp. baking powder
½ tsp. salt

Icing
¼ c. butter. 1 egg yolk. ¼ tsp. vanilla 1 tbsp. grated orange rind 2 tsp orange juice

Directions:
Directions:
Beat first 5 ingredients well and add remainder of ingredients. Mix well.
Fold in stiffly beaten egg whites.
Put in 8 x 12" pan.
Bake at 350º F for 45 minutes
Ice with orange icing.
