4 lb beef chuck roast
⅛ lb salt pork
Pepper
1 clove garlic
Salt
Flour
4 T, shortening
2 onions, sliced
1 bay leaf
1 c boiling water

Directions:
Directions:
Cut the salt pork in thin slices and rub with pepper. Cut deep gashes in the roast and insert the pork slices. Rub the roast with the garlic and salt and dredge with flour. Brown well in the shortening. When brown on all sides, top with the onion and bay leaf. Add the boiling water; cover closely and simmer for about 3 hours, adding more water if needed.
