3 pork tenderloins
1 tsp salt
1 tbsp vegetable oil

Sauce:

1 tbsp butter
1/4 cup chopped shallots
2 cups sliced Shiitake mushrooms
1/4 cup dry sherry
1 tbsp soy sauce
1/4 cup beef stock
1 tsp fresh chopped thyme
1 1/2 cups whipping cream

Directions:

Preheat oven to 425ºF

1. Sprinkle pork with salt and pepper.

2. In a large, oven-proof skillet, heat oil over medium-high heat; brown pork all over.

3. Transfer to oven. Cook 20 minutes, or until hint of pink remains. Transfer to plate and let stand under foil while you make the sauce.

4. In same skillet, melt butter over medium heat. Cook shallots until tender - 2 minutes.

5. Add mushrooms and cook until golden - 5 minutes. Add sherry and soy sauce - cook 1 minute scraping up brown bits of meat.

6. Stir stock into mixture. Cook until reduced by half. Add whipping cream. Boil 10 minutes until reduced to 1 1/2 cups. Add thyme. Spoon over pork.
