Bruschetta Ingredients:

6-7 plum tomatoes
3/4 cup red onion
Salt
1/4 cup olive oil
4 leaves of fresh basil (sliced small) or 2 heaping tsp of basil pesto

Bread Cup Ingredients:
12 slices of white bread
Melted butter

Directions:
Directions:
1. Dice the tomatoes small, dice onion small, add oil and basil, salt to taste.

2. Let sit overnight at room temperature before serving.

Bread Cups:

1. Remove crusts from bread slices.

2. Brush with melted butter on both sides (lightly-don't soak)

3. Form into muffin tins.

4. Bake at 350F until golden brown (approx. 10 minutes)

Spoon tomato mixture into the cups and serve.
