1 egg
1 cup all-purpose flour (If using self-rising flour, omit baking powder and salt)
3/4 cup milk
2 tbsp shortening, melted, or vegetable oil
1 tbsp sugar
3 tsp baking powder
1/2 tsp salt

Directions:
Directions:
1. Beat egg with hand beater until fluffy; beat in remaining ingredients just until smooth.

2. Grease heated griddle if necessary (or frying pan).

3. Pour about 3 tablespoons batter from tip of large spoon or from pitcher onto hot griddle (or into frying pan).  Cook pancakes until puffed and dry around edges. 

4. Turn and cook other sides until golden brown. 

(To keep pancakes hot, stack on hot plate with paper towels in between and place on cookie sheet in 250 degree oven or in warming oven). 

Add blueberries or bananas if so desired.
