1 15-oz can chickpeas, drained and rinsed.
2 Tbsp extra virgin olive oil
1/2 onion, finely diced
4 cloves garlic, finely minced (I always use less)
˝ tsp. sweet smoked paprika
˝ tsp. cumin powder
˝ cup tomato sauce
2 cups fresh spinach
sea salt
black pepper

Directions:
Directions:
Heat a large nonstick fry pan on medium heat w/ olive oil.
After 2 minutes, add chopped onion and garlic. Mix together and sauté about 3 minutes until onion is translucent.
Add the paprika and cumin and mix together
Add the tomato sauce and season with salt and pepper. Mix until well combined.
Add spinach and continue to mix. Once the spinach has wilted, add the chickpeas.
Season again with salt and pepper, and gently mix until well-combined.
Cook between 3-4 minutes and serve directly out of pan.
