1 C raw peanuts
1 C sugar
1/2 C light corn syrup
1/8 tsp salt
1 tsp butter
1 tsp vanilla
1 tsp baking soda

Lightly grease a large baking sheet (cookie sheet). Measure-out and have ready to use the 1 tsp baking soda.

NOTE: This mixture becomes very hot so use caution. For stirring and spreading onto baking sheet use two table knives.

In a 1-1/2 qt glass casserole dish, stir together peanuts, sugar, syrup and salt. Microwave on high for 8 minutes, stirring after 4 minutes.

MIx in butter and vanilla. MIcrowave 1 minute longer.

Quickly stir in baking soda and continue stirring rapidly until mixture is light and foamy.

Immediately pour onto greased baking sheet and spread out into a thin layer.

Cool completely, and break into pieces. Use an airtight container to store. Makes approx. 1 pound of candy.

My boys' grandmother, Edna Olson, made this peanut brittle every Christmas. She was a working lady and this saved her time. Kids love it and so does my husband!
