4 T. olive oil
1 medium onion, finely chopped
2 cloves garlic, chopped
16-ounces Italian sausage, roughly chopped
28-ounce can chopped tomatoes, preferably San Marzano
1 T. tomato paste
1 tsp. clear honey
Italian Seasoning
salt and freshly ground pepper
1 lb. pasta of your choice (I use bow tie pasta)
freshly grated Parmesan cheese to sprinkle

Heat 2 tablespoons of the olive oil in a saucepan and fry the onion and garlic until softened and beginning to brown. Add the chopped sausage and continue frying for a couple of minutes until the sausage has heated right through. Lower the heat and add the chopped tomatoes, tomato paste and honey. Stir to combine them with the onion and season with salt, pepper and Italian Seasoning (to taste). Let simmer uncovered for 10-15 minutes so the sauce can reduce and thicken a bit. Bring a pan of salted water to a boil and cook the pasta until just tender (al dente). If the pasta you have chosen is fresh, this will take about 5 minutes. Dried pasta will take roughly twice as long. When cooked, drain the pasta thoroughly in a colander and toss it in a bowl with the remaining olive oil and plenty of pepper. Arrange the pasta on 1 large serving platter or 4 individual ones and spoon the sauce over the top. Serve with a large bowl of fresh Parmesan.
