1 lb. backfin crab meat
1 1/2 tbsp. flour
1 egg
1/4 c. heavy cream
salt, pepper, and cayenne to taste
chopped parsley
1/2 stick butter

Directions:
Directions:
Gently stir crab and flour together until crab is well coated. Beat egg, cream, and seasonings together. Add parsley and gently mix with crab.

Melt butter in heavy skillet. When skillet is hot, drop large spoonfuls of crab into hot butter and brown. Cook for 5 minutes on one side; then turn and cook 5 minutes on other side. Make just prior to serving.

Barbara served crab cakes with cocktail sauce mixed with mayonnaise and sweet relish as a sauce either on the side or on top. She also served the dish with very good cole slaw.
