Ingredients: Left over mashed potatoes, NOT INSTANT! 1 egg and don't think 2 will make better, it won't Salt and pepper to taste ½-1 cup flour 1 large onion sliced 1 stick butter and use real butter!

Directions:In large fry pan melt butter and cook onion until edges are brown -set aside. While doing that start a pot of water on the stove at med high heat. Add about ½ salt to water and boil.. In a bowl add cold leftover potatoes, salt and pepper and egg. Use one hand to mix all together and try to keep other clean in case phone rings. Sprinkle about ½ cup flour into mix and blend lightly. The less you handle the mixture the more fluffy the Knepps will be. More than likely you will have to add more flour. You want the dough to stick together but no be sticky. If much of the dough is sticking to your hands it needs more flour. When dough is right roll some into a ball the size of a walnut and drop into boiling water. The ball will pop to the top when ready and let boil about 15 sec more Remove, cool and taste for doneness. If it falls apart after cooking add some more flour to the rest of the batch. Roll remaining dough into balls and boil in water take out. Place all cooked balls into fry pan with butter and onion and cook on med until coated and serve. |
