2 T butter/oil
2 T all-purpose flour
2 cups stock liquid (chicken stock, pot roast juice, etc.)

1. Make a roux by melting the butter in a medium saucepan over medium heat.
2. Once butter is melted, add the flour and stir with a whisk until the flour is completely absorbed and a soft dough has formed and is light brown.
3. Add stock a little at a time, whisking each time to incorporate.
4. Once all stock has been added, bring mixture to boil, then reduce to simmer until desired consistency, about 10 minutes. Add more stock as needed for desired thickness.
