3 cup flour
2½ cup sugar
1 T. baking soda
1 T. cinnamon
1 tsp salt
4 large eggs
1½ cup salad oil
1 tsp vanilla
2 cups packed shredded carrots
1.8g can walnuts (2 cups chopped)
1 cup chunky pineapple

Directions:
Directions:
1. Grease and flour 2, 9 inch layer cake pan.
2. In large bowl with spoon, mix flour, sugar, baking soda, cinnamon and salt.
3. In a small bowl with fork, beat eggs slightly, stir in salad oil and vanilla.
4. Stir egg, milk, carrots, walnuts, pineapple into the flour mix, just till flour is moistened.
5. Bake at 350ºF for 40-45 minutes.

Cream cheese frosting:
8 ounce package of cream cheese
½ cup butter
1 T. lemon juice
1½ tsp vanilla
5½ cup powdered sugar
