Grandma R.'s Hummingbird Cake Recipe

3 c. flour
2 c. sugar
1 tsp. baking soda
1/2 tsp. salt
1 c. oil
3 eggs, beaten
2 c. chopped bananas
1 c. crushed pineapple with juice
1 c. pecans, chopped

Icing for cake:
8 oz. cream cheese, softened
1 stick oleo
2 tsp. vanilla
1 1/2 c. powdered sugar

Mix together (do not beat) flour, sugar, baking soda, salt, oil, and eggs. Fold in bananas, pineapple, and pecans. Bake in sheet cake pan at 350 for 25-30 minutes or Bundt pan for 45-50 minutes. Cool and frost with icing.

Icing: Cream oleo and cream cheese. Add vanilla and powdered sugar. Beat until smooth.
