One whole organic chicken cut into pieces ( or use approximately eight chicken parts of your preference)
1 cup flour
1/8 cup yellow cornmeal
2 cups of a high heal oil (peanut or olive oil are good choices)
Make a seasoning mix using the following ingredients ( double or triple the mix and save in a container to have on hand when making your next chicken dish):
- 1 1/2 tsp salt
- 1/2 tsp black pepper
- 1 tsp cumin
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp oregano
- 1/2 tsp paprika

Cut whole chicken into parts and rinse well under cold water, making sure to remove all the thin layers of blubber found under the skin of the breast and thigh. Also trim excess skin on the chicken. Pat chicken dry with a paper towel to remove excess moisture.. Sprinkle the seasoning mixture over and under skin of the chicken. Place the chicken in a gallon size bag. Add flour and cornmeal to the bag and shake bag to coat all the chicken pieces. Shake excess flour/cornmeal mixture off the chicken and set the chicken aside on a plate or piece of wax paper to have ready for frying .

Heat oil in a large frying pan on medium high heat. Once oil has heated up fry the chicken in batches (try not to overcrowd the pan .. or you can use two pans so all the chicken is done at the same time) Fry approximately eight to ten minutes per side, once the chicken reaches approximately 170 - 175 degrees on an instant read thermometer.remove pieces to a paper towel to drain off grease (Note if you do not have a thermometer check by cutting into a piece of the golden brown chicken to making sure their is no pink and chicken is cooked thru)

Fried Chicken is a family favorite and the perfect Sunday meal to serve up with a side of creamy mashed potatoes and vegetable of your choice. The chicken can be seasoned and left in the bag overnight in refrigerator and cooked the next day.
